Eunice Yvette Vargas, age 63, of San Antonio, TX passed away on May 20, 2025. She was born on March 1, 1962 in San Jose, California. A visitation will be held on Monday, June 2, 2025, from 6:00 pm – 8:00 pm at Cornerstone Church, 18755 Stone Oak Pkwy, San Antonio, TX 78258. A Funeral Service will be held on Tuesday, June 3, 2025 at 10:00 am at Cornerstone Church, 18755 Stone Oak Pkwy, San Antonio, TX 78258. Interment will follow at Mission Burial Park North, 20900 I-10, San Antonio, TX 78257. She is preceded in death by her birth mom Edelmira Gomez, her parents, David and Hope Chapoy, brother David Chapoy, niece and nephew Korrie Lyn and Nathan Chapoy. She is survived by her daughters Jennifer Mendoza (Kaliki), Amanda Vargas (Thomas Callinan), grandchildren, Ethan and Kaidyn Mendoza, Finley and Charlotte Callinan. Her ex-husband George Vargas, who remained a close friend and support to her throughout her life. Her sisters, Elva Rodriguez and Bernice Rivera. Her brothers Eddie Hernandez (Natasha), Rene Chapoy (Cindy), Leroy Chapoy (Tina), Otto Talley (Cindy), Dennis Chapoy (Deborah) and John Talley. Her aunts Ruth Gomez, Amparo Yvette Briones, uncle Leonel Gomez and numerous, cousins, nieces and nephews. Yvette’s life was an inspiration, as she attended college later in life and graduated Cum Laude from St. Mary’s University in 1994 and received her MBA in 2019. However, her career did not define her. Jesus and family were at the heart of Yvette’s life, and she treasured the moments spent with her children and beloved grandchildren. They brought her immense joy and were a constant source of pride. In addition, Yvette enjoyed the company of her friends, whether it was sipping wine in Fredericksburg or hosting game nights, she always wanted her home to be a welcoming haven, a place where friends and family gathered to celebrate life’s special moments. She had a deep unwavering faith and believed wholeheartedly that upon her passing, she would be welcomed to heaven. This conviction brought her immense comfort, and she shared this faith with her family and friends, instilling a sense of peace and hope in their hearts. As we remember Yvette, we celebrate her adventurous spirit, her loving heart and her unshakeable faith. She leaves behind a legacy of love and cherished memories that will continue to inspire and uplift all who knew her.
