Fabian James Pollok, 88, of San Antonio, Texas, passed away peacefully on July 28. Fabian was born on November 8, 1937, at his family's home in Hobson, Texas, to Clem and Theresa Pollok. He was raised on the family's 98-acre farm, where hard work became a way of life from an early age. Fabian often reminisced that, as a boy, he was responsible for a variety of chores—from picking cotton and shucking corn in a cast-iron corn shucker wired to a tree, to rising early each morning to pull hornworms from the tomato plants. He also enjoyed hunting with his faithful dogs, Old Shep and Number Nine, often bringing home a guinea rooster or two for the family's supper. Those early years instilled in him a strong work ethic, self-reliance, and determination that remained with him throughout his life. After beginning his career as a carpenter working alongside his brother-in-law, Edward Lyssy, Fabian established Pollok Interior Trim, an interior trim contracting business that he proudly operated for more than 50 years. He took tremendous pride in his craftsmanship and the reputation he built through decades of honest work. Outside of work, Fabian found great joy in the outdoors. Whether he was hunting, fishing, or searching the fields at the deer lease for arrowheads, he appreciated the simple pleasures of nature and the adventures each day could bring. Family was the center of Fabian's life. He shared 65 wonderful years of marriage with his beloved wife, Joyce, whose love and companionship were the foundation of their family. He treasured spending evenings with Joyce watching Wheel of Fortune. Heaven help anyone who interrupted the show with breaking news or a sporting event. Fabian also had his own unique way of doing just about everything, and if someone chose a different approach, a spirited discussion was almost guaranteed. Those who knew him best also knew that earning one of Fabian's colorful nicknames was practically a rite of passage—some affectionate, some humorous, and a few best left unspoken in polite society. His stubbornness, wit, and unmistakable personality left an impression on everyone fortunate enough to know him. Above all, Fabian was a devoted husband, father, grandfather, brother, and friend. His family will forever cherish the lessons he taught through his example of hard work, perseverance, loyalty, and love. Fabian is survived by his wife, Joyce Pollok; his sons, Randy Pollok and his wife, Angie, and Jim Pollok and his husband, Jimmy Barrett; his grandchildren, Kaitlin Johnston and Kearsten Parmer and her husband, Chance Parmer; his great-grandchildren, Wesley James, and Lorie Lynnelle Johnston, and Creek Dalton Parmer; and his sisters, Terri Little, Florence Lyssy, and Ruth Kirkland and her husband, Boyd Kirkland. He was preceded in death by his parents, Clem and Theresa Pollok; his brothers, Louie, Lambert, Harry, and Clem Jr.; and his sisters, Emily Gorzelle and Shirley Moczygemba. Fabian will be remembered for his unwavering work ethic, his love of the outdoors, his exceptional craftsmanship, his unmistakable sense of humor, and the deep love he had for his family. Although he will be deeply missed, his legacy lives on through the family he loved, the values he instilled, and the example he set through a lifetime of hard work, perseverance, integrity, and unconditional love. The countless memories he created will continue to be shared around family tables for generations to come, ensuring that his stories, laughter, and spirit will never be forgotten. A celebration of Fabian's life will be held at Dellcrest Funeral Home, 2023 South WW White Road, San Antonio, Texas 78222 with interment to follow at Panna Maria Cemetery (Immaculate Conception Catholic Cemetery), 676 County Road 242, Hobson, Texas 78117. In lieu of flowers, the family asks that you spend time with those you love, enjoy the outdoors, lend a helping hand to someone in need, and remember Fabian with a smile whenever Wheel of Fortune comes on.
